Description The module will cover:
  • Legislation relating to composition and labelling, chemical safety, marketing standards, allergens and additives legislation;
  • Food adulteration and authenticity, the role of the Public Analyst and the limits of common techniques used;
  • Foof composition meaning the major food groups and the legal composition of foods such as chocolate, bread, meat products and dairy products.
The module is externally accredited by the Charted Institute of Environmental Health and follows the syllabus set by them.
Learning Outcomes By the end of the module the student should be able to:
  • Access, read and apply food standards legislation issued by the Food Standards Agency and the European Commission;
  • Demonstrate a detailed knowledge of common food standards legislation and be able to apply this knowledge correctly in typical situations;
  • Identify contraventions of food standards legislation correctly in typical situations and be able to determine a suitable course of action, using the full range of options available to enforcement officers.
