Description
This will cover the application of official controls to food premises, especially those in manufacturing, food service and retail. Powers of Officers under relevant legislation (currently Food Safety and Hygiene (England) Regulations 2013) will be applied to case studies designed to identify key aspects of the delivery of official controls, including imported food and controls under Regulation (EC) No 669/2009 as amended.
Learning Outcomes
By the end of the module students should be able to:
Demonstrate an understanding of the process followed in food safety interventions that begins with identifying hazards, assessing/evaluating the risk, recognising remedial measures, and concludes with their implementation according to any enforcement strategy in place at the time that may call for action that is consistent, proportionate and in line with the ‘hierarchy of enforcement’
Identify the legislation that provides the basis for food safety control through enforcement in the UK, and demonstrate an understanding of how this can be applied in an enforcement situation, including the value of statutory defences such as ‘due diligence’ when deciding to initiate legal proceedings.
Display an understanding of the checks on foods required at points of entry into the UK, including the need for enhanced sampling requirements in certain circumstances.
